A quick stir fry of tofu and remaining end pieces of bread…
Ingredients
Tofu – 100 gms
Bread – 80 gms
Garlic – 5 gms
Onion,bellpepper, tomatoes,corn – 10 gms each
Red chilli powder – 1tsp
Turmeric powder – 1/2 tsp
Pav bhaji masala powder- 1 tsp
Salt to taste
Stevia – a pinch or two
Lemon – a wedge
Coriander for garnish
Oil – 5 gms
Method
Cut the bread and tofu into cubes keep aside separately ..
In a hear non stick pan add chopped garlic and rest of the veggies and sauted till the mixture is soft..
Add the remaining powders+ salt+ Stevia
Mix and cook for 5 mins then add tofu..
Toss on high flame for 3 mins..
Then add the bread pieces and toss again for 2-3mins…
Lower the flame and sprinkle some water on the food and cover it and cook it for 10 mins ..
Make sure to toss it every few mins…
Serve it hot with lemon wedge and garnish with coriander
