For the curry:
Silk coconut milk which is less fat as i am on lcd. Ginger garlic paste, 1 tbsp of stevia, thai red curry paste 1 tbsp, 1 tbsp light soy sauce, tofu and mint
Saute ginger and garlic in some olive oil,
After a while put thai red curry paste and let it blend with ginger and garlic,
After a minute put coconut milk , i put 2 cups as i had made 2 portions,
With the paste, the color will turn to light orange, cook it for 2 to 3 mins,
Put soy sauce, stevia, lime juice(optional) and wisk the mixture so that everything blends well.
Now put veggies(green and red bell peppers, yellow onions, thai basil leaves) and tofu and cook for a while.
Serve hawt with rice!!!
